A healthy muffin recipe for my gluten-free and vegan friends. These are healthy muffins and pack a bunch of flavour!
Ingredients
1 1/2 cups of non-dairy milk (I use Oat milk)
1 Tbsp egg replacement powder + 1/4 cup water (or, 2 eggs)
1/2 cup maple syrup
1/2 cup unsweetened applesauce
3 cups old fashion oats
1 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp pure vanilla extract
1/4 tsp salt
1 cup peeled and chopped apples
Directions
Preheat oven to 350°F. Line muffin tin with liners or grease.
Combine all ingredients in a large bowl, except for the apples. Mix in the apples last.
Spoon batter into muffin tin and fill all the way to the top.
Bake for 22-25 minutes or until edges are lightly brown and top is set.
Cool and serve!
