This recipe is delicious and citrusy. The loaf is moist and utterly scrumptious! This recipe is from Jo Cooks with my added comments.
Ingredients
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt (sea salt preferable)
1 cup Greek yogurt
1 cup granulated sugar
3 eggs
2 tsp lemon zest from 1 lemon
1/2 tsp vanilla extract
1/2 cup vegetable or canola oil
Glaze
1/3 cup sugar or 1/4 cup (dependent on how sweet you want it)
1/3 cup fresh lemon juice
Directions
1. Preheat oven to 350F. Grease a 9 inch loaf pan.
2. In a bowl, mix yogurt, sugar, eggs, lemon zest, vanilla extract and vegetable oil. 3. Add in the dry ingredients and blend well.
4. Pour batter into pan and tap the pan to even out batter. Bake for 45-50 minutes or until a toothpick is removed clean. 5. For the glaze, dissolve sugar in lemon juice in a saucepan.
6. When the loaf has cooled for 10 minutes, transfer onto tin foil inside a baking tray. Fold up the edges of the tin foil to keep the glaze from running onto the tray, if you wish. Pour the glaze over the loaf. Let cool and enjoy!
