Matcha Madeleines

If you haven't had matcha madeleines before, you need to make these (or at least get someone to make them for you). If you love matcha, these are the perfect fit. I cannot emphasize this enough but, find yourself a quality culinary matcha. I highly recommend the matcha powder from Soar Organics https://soarorganics.com/


These madeleines aren't too sweet, they're fluffy and have an incredible flavour profile. Additionally, this recipe can be easily used for Gluten Free madeleines. I've baked a GF version of these on numerous occasions and it works like a charm.


Makes about 16 madeleines

*You will need a madeleine pan (or 2) to make these*

Ingredients

  • 3/4 cup all-purpose flour

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 eggs

  • 1/2 cup granulated sugar

  • 1 1/2 teaspoons of matcha powder

  • 1/2 cup unsalted butter, melted and slightly cooled

Directions

  1. Preheat the oven to 400 °F. Butter a small madeleine pan.

  2. In a bowl, beat the eggs and sugar until well combined.

  3. Gently fold in the dry ingredients. Fold the butter in the same way. Cover and refrigerate for at least 30 minutes or freeze for 15 minutes.

  4. Fill each cavity three-quarter up with batter using a piping bag. Bake for 8 to 10 minutes or until the madelienes are lightly golden brown.

  5. Remove from the pan and let cool. Once cool, the madeleines should pop out easily.

  6. Option to drizzle white chocolate, sprinkles or topping of choice.
