Pulled this recipe out of my Cooking Light book but changed the recipe a bit. It‘s a plain scone with a bit of apple and sugar to it! It‘s definitely a healthier scone with reduced sugar.
Ingredients
1 cup and 2 tbsp all-purpose flour
1 cup whole wheat flour
1/3 cup sugar
2 tsps baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
Dash of nutmeg
1/4 cup chilled butter cut into small pieces
2 peeled and shredded Granny Smith medium apples 1/2 cup milk
1 tsp pure vanilla extract
2 tbsps milk
2 tsp cane sugar
Directions
1. Preheat oven to 425F and line baking tray with parchment paper.
2. Combine flours, sugar, baking powder, cinnamon, baking soda, salt and nutmeg. Stir with whisk. 3. Add in butter with pastry blender or use two knives and mix until it resembles a coarse meal. 4. Add in apple, milk and vanilla and mix until the dough is sticky. 5. On a lightly floured surface knead dough 4 times and split into two. Round out each piece into a 6 inch circle. Cut into five wedges, not all the way through the dough. 6. Brush the top with 2 tbsps milk and sprinkle sugar on top. 7. Bake for 15 minutes or until golden. Might require additional bake time if your dough is more wet. 8. Enjoy with jam, butter, honey or buttercream!
